It’s the last couple days before Christmas and I’m in the mood for cookies. I’ve also been on a real gingerbread kick lately—and as a bonus, have all the ingredients on hand—so I decided to make some of these. This is a nice straightforward recipe and it made very good cookies. They came out nicely chewy. Don’t be afraid to have a heavy hand with the spices.
